Paolo has painstakingly researched this menu to present original dishes from the medieval era. You’ll notice the absence of potato and tomato, which weren’t introduced to Italy until after the 1500s.

Zuppa povera con fagioli e ceci - soup of the poor with beans and chickpeas served with fried bread
Maiale arrosto con cavolo verzato, olive, cipolla e salsa allo zafferano - roast rolled spiced pork with purple cabbage, olives and onions and a saffron sauce.
Ricotta di capra con miele e nocciole abbinate con ciambellino al vino - locally-sourced goat’s milk ricotta with honey and hazelnuts served with sugared wine biscuits.
Ippocrasso - a traditional medieval warmed spiced wine.
